What is an appropriate diet for pet mice?

Whatever you do, do NOT feed them any sort of dry grain like oats, wheat, or rice and then give them lots of water. A friend of mine did that to a mouse once. He fed it a bunch of oats and then a bit of warm water. The poor mouse died when the combination popped his stomach.
